Fernando's Double-Fried Party Wings

This method gives you extra-crispy wings with juicy meat inside — better than any fast-food wing spot.

Ingredients

  • Party chicken wings (drumettes and flats)
  • Salt

Dredge mix

  • 1 cup flour
  • ½ cup cornstarch
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder

For finishing

  • Butter (melted)
  • Your favorite seasoning or sauce:
    Lemon pepper
    Honey BBQ
    Sriracha
    Buffalo sauce
    Dry rubs

Day Before (Dry Brine)

  1. Spread wings on a wire rack over a baking sheet.
  2. Pat wings dry with paper towels.
  3. Salt both sides of the wings.
  4. Refrigerate uncovered overnight.

This step removes moisture and helps create crispy skin.

Cooking Day

Step 1: Dredge the wings

Remove wings from the refrigerator.

In a zip-lock bag or container, mix:

  • Flour
  • Cornstarch
  • Salt
  • Onion powder
  • Garlic powder

Add wings in batches and shake for about 30 seconds until evenly coated.

Place dredged wings on a baking sheet and let rest 20 minutes while heating oil.

This helps the coating stick.

Step 2: Heat oil

Heat deep fryer oil to 350°F.

Step 3: First fry

Fry wings in batches for 6 minutes.

Do not overcrowd the fryer.

Remove wings and let them rest while you increase heat.

Step 4: Second fry (the crisping step)

Increase oil temperature to 375°F.

Fry wings again in batches for 5–6 minutes, until golden brown and crispy.

Remove and rest wings for 5 minutes.

Step 5: Toss and serve

A melted butter in a large mixing bowl.

Add hot wings and toss.

Then add your favorite seasoning or sauce and toss again.
