Bring the chicken breast to room temperature before cooking. Recommended methods:
- Whole Roasting: Preheat oven to 400°F. Roast breast-side up for 35–45 minutes until internal temp reaches 165°F.
- Butcher & Sear: Fabricate into airline breasts or halves, then pan-sear skin-side down until crisp. Finish in oven.
- Broil & Baste: Broil bone-side down and baste with butter or stock for a rich, lacquered finish.
Always cook to an internal temperature of 165°F. Let rest 5–10 minutes before slicing for best results.
