Chef’s Tip

Cooking Instructions
- Sautéed: Heat butter or oil over medium heat. Cook 2–3 min per side until browned and just cooked through.
- Grilled: Skewer and grill for 2–3 min per side over medium-high heat. Baste with marinade or butter.
- Pâté: Sauté with shallots and thyme, then blend with butter and a splash of brandy until silky smooth. Chill and spread on crusty bread.
Cook to an internal temperature of 165°F. Let rest before serving.
