Chef’s Tip

For clear, gelatin-rich stock: blanch first, then simmer low and slow with aromatics. For dim sum, marinate and steam until tender. Want crunch? Boil, dry, then deep-fry until puffed and golden — serve with spicy glaze or vinegar dip.

Cooking Instructions

  • Boiled Broth: Blanch for 5 minutes, then simmer with onions, garlic, celery, and herbs for 4 hours. Skim foam for clarity.
  • Steamed (Dim Sum): Steam in a wok or bamboo steamer for 10 minutes, then marinate and steam again until soft.
  • Deep-Fried: After boiling and drying, fry at 350°F for 3 minutes until golden and crisp.

Always cook to 165°F internal temp. Let rest before serving.
