🍳 Cooking Instructions
Bring chicken to room temperature before cooking. Here’s how to make the most of this special cut:
- Roasting: 400°F for 35–40 minutes until internal temp reaches 165°F
- Pan-Searing: Crisp skin-side down, then finish in oven at 375°F for 10–12 minutes
- Deep Frying: Marinate, dredge, and fry at 350°F for 10–12 minutes until golden
Let rest 5 minutes before slicing or serving. Always cook to an internal temperature of 165°F.
🍔 Featured Recipe: Crispy Jidori® Fried Chicken Sandwich
This sandwich captures everything you want in a show-stopping chicken bite — crispy skin, juicy dark meat, and just the right spice.
Ingredients:
- 2 Jidori® Boneless Whole Legs (with Feet Attached)
- 1 cup buttermilk
- 1 tsp salt, 1 tsp paprika, ½ tsp garlic powder, ½ tsp pepper
- 1 cup flour + 2 tbsp cornstarch
- Oil for frying
- Brioche buns, pickles, and spicy aioli
Instructions:
- Marinate chicken in buttermilk and spices for 4–12 hours
- Dredge in flour/cornstarch mix and press firmly to coat
- Fry at 350°F for 6–7 minutes per side until golden and cooked through
- Layer on toasted brioche with spicy aioli and pickles. Serve immediately.
